To that which I have not written in so long;
as I've been away to Toronto once again;
hence leaving Larry to the post and holding
strong. I arrived at U of T and watched a
Mid Summers Night Dream, Shakespeare (out side
under the trees. A wonderful evening and a
delightful play. Funny in all kinds of ways;
it felt like the time period of Shakespeare come
to pass...
Anyways, on with Larry and Char's incredible life~
The past couple of days have been hectic so we
made up a pot of (Lazy Veggies Cabbage Rolls; Chars Recipe)
Its been real tasty and hearty. Of course the
healthy chocolate (pudding) cake; (no punn intended lol)
has been keeping in the fridge. It tastes really
good cold. We are amazed at how well it is keeping and
tasting. Because it has mostly veggies in it and pure
natural cocoa it doesn't spoil. All we can say is yum yum yum!
Lots of greens salads as well as fresh fruits and vegetables.
If anyone has a recipe for artichokes; (I have this purple
shaded thing in my fridge that I can never remember the name
of, but its suppose to be good to cook with?) any guesses
anyone; Im still trying to remember as I write. I'll come
back to it...
In any case, things are well in the household, doing more
yard work for the parade day post party!! We are planning on
doing a few recipes to offer for the parade day. We already
have very healthy hamburger and hotdog buns! (paying attention
to the details is so much fun***)
anyways....,,,,thats all for now, planing on stuffed meditreanean
tofu peppers (chars own recipe) Recipes for Lazy Veggies Cabbage Rolls
coming up------
Lazy Veggies Cabbage Rolls
3 tbsp oil (hemp oil is the best), or safflower oil
1 Cup Firm Tofu
1 Whole Onion
3 Cups of diced mushrooms
2 Large cans diced tomatores
3 tbsp fresh garlic
3 tbsp organic veggie spice
(this is sold at costco, no salt added)
1 tbsp garlic salt
3 tbsp fresh parsley
6 cups chopped cabbage
1 tbsp fresh pesto
1 jar of classico garlic and tomatoe spaghetti sauce
Crumble the pound of tofu into a 4 ltr pot; add onion, diced
mushrooms, organic veggie spice.
Brown with (Hemp Oil 3 tbsp)After the tofu is browned (tofu
takes on the flavors you spice it with, so browning creates
this absorbtion. About 15 20 minutes. Pour in the diced
tomatoes and stir until combined. Add pesto and garlic salt,
and stir again. Top off with chopped cabbage. Put the lid on
and let the cabbage steam on the top until limp and then continue
to stir into recipe. Cook on medium for about an hour, or until
preferred texture. When serving sprinkle asiago cheese

Oops~
Yesterday, being Tuesday; we had a hamburger day.
We ate well all day, but we both had plans after
work and no meal plan. I ended up with a severe
migraine from trying to wait until I got home.
On my way home I broke down and ate a mcdonalds
quarter pounder. I would have to say it made improvement
on my appetite (I lost it); I truly felt lousy after
eating it; and it did nothing for my headache.
Our lesson for today it to plan, plan, plan.
We have to make sure we plan for all days; including
the ones that are not a regular schedule.
Back on track today though...a curried tofu vegetable
stir fry. Looking forward to the nutrition for today.

Post Weekend
Oh what fun it was to bake a cake*
I don't remember the last time I baked a cake.
There were so many ingredients.
Of course not everything went perfect, or at least
not until the very end; I put the 1 cup of soy milk
in the batter (oops). The pudding cake turned
out to be very delicious and rich tasting. Its amazing
that there is not one cup of sugar not even a teaspoon,
and it tastes sweet and chocholaty.(my new word)
The vegetable bean chili soup is very full bodied with
flavors. We did this recipe from the book and substituted
some things we did not have. When we serve it we add
different things at different times; mustard, asiago cheese,
pharmeseane cheese. Each ingredient on top makes it taste
like a different meal.
Weeding the yard for a couple of hours was good exercise;
lots of weeding lots of sweating...phewww
A thunderstorm came by and pouring rain chased us indoors.
We're going for a long bike ride after work today.
We'll be having our awesome left overs for the next
couple of days; adding greens and salads.
We're feeling great; Larry's sugars are leveling out
better every day~

One week today!
They say it takes 21 days to make a new habit;
it feels good to apply this amazing high nutrient
eating plan over the past 7 days! It feels like
its already been 21 days!
The thing that we are finding is that we are truly
not having any food cravings at all. We are not
hungry between meals. Today Larry's blood sugar
was the lowest two hours after his meal. Yea!
A greens salad with nuts and seeds, ovacado, blue berries,
with a vinigrete dressing for lunch. 1 Piece of Talapia 6oz.
For supper we had a boneless, skinless breast of chicken,
baked with asparagus spears, peppers and onions, with a shaving
of asiago cheese after it came out of the oven. We had a diced
apple with cinnamon and raisins for dessert. We ate around 7pm,
its now 11:15, and we are not hungry*
I love blogging our incredible life and it feels like its just
going to get better and better! Lots of yard work for tomorrow
and a bike ride.
We are going to bake a healthy chocolate cake. I am posting the recipe here
tonight and I will bake it tomorrow...
Here's to having our cake and eating too!
Health Chocolate Cake Recipe:
1 2/3 cups whole wheat pastry flour
1 teaspoon baking powder
3 teaspoons baking soda
3 1/2 cups pitted dates, divided
1 cup pineapple chunks, drained
1 banana
1 cup unsweetened apple sauce
1 cup shredded beets
3/4 cup shredded carrots
1/2 cup shredded zucchini
3 tblsp natural cocoa powder
1/2 cup currants
1 cup chopped walnuts
1 1/2 cups water
2 tsp vanilla extract
Icing
1 cup raw macadania nuts or raw
cashews unsalted
1 cup vanilla soy milk
2/3 cup pitted dates
1/2 cup brazil nuts or nutella
2 tblsp natural cocoa powder
1 tsp vanilla extract
Directions
Preheat oven to 350. Mike flour, baking powder, and baking soda in a
small bowl. Set aside. In blender or food processor, puree 3 cups of dates
with the pineapple, banana and applesauce. Slice remaining 1/2 cup dates
into 1/2 inch pieces. In large bowl, mix sliced dates, beets, carrots, zucchini,
cocoa powder, currants, walnuts, water, vanilla, and flour mixture. Add the
blended mixture and mix well. Spread in a 91/2 x 13 1/2 nonstick backing pan.
Bake for one hour or until a toothpick inserted into the center comes out clean.
Icing
Using a high-powered blender, combine all icing ingredients until smooth
and creamy. Place a dollop over warm cake and serve. If desired, you can
spread it on cooled cake, too.

Yesterday was Day Six
(Charlene) went to Toronto today and had a great
day with Jonathan; I went walking all over the city
with Jon...Toronto has many scenic sights that come
out of little corners and alcoves. Jon showed me a
beautiful 30 foot water fall right in the middle of
the city (beautiful and refreshing energy.
Larry kept the fires burning at Autosmart. It was
a quiet day on the home front. Larry said he had
a smooth day while I was away.
I ate a really nice lunch with Jonathan (I had a 6oz
steak and a greens salad; delicious, the steak was salty
and tender (yummy).(salt is my new no no, so it was a
real treat; actually so was the beef.
We must have walked about 6 kilometers, or at lease
it added up to being about an hour and a half walking
the streets of T Dot. It felt good to push my knee. Jon walks
very fast, I was definatly power walking! My legs feel
good today.
Larry ate a jumpin jacks pita. He said it didn't taste all
that good. We are getting used to eating healthy at home;
Dr. Fuhrman, did say once you start eating well, the bad
stuff tastes bad. My second meal yesterday with Jon was
a grilled chicken with iceburg lettuce with cheese and
vinegrette dressing.
I feel good about what I ate and it felt good to walk it
off. Of course I need to say a couple of cold beers went down
really good in between our sites of Toronto; listening to
a blues band on a friday afternoon on Queen st. west, Toronto
sitting with my Son Jon; a fine day that it was!

Hitting Five Feels Alive!
Sooooo...here we are already on Day 5 and feeling alive.
We highly recommend a B Complex, plus B12 daily supplement.
We have been taking this all week and we are finding
that we feel more energy and our moods are calmer and reacting
better to life...
Eating talapia was delicious, it was bought already lightly breaded
from Costco, "very tasty fish"(says Larry and he hates fish!)I actually
cheated today because of all the food tasting at Costco.
We did a 2 km walk in the neighborhood this evening. Its almost muggy
out, but cool to the flesh.
Whats exciting about our day today? We accomplished our bookkeeping goals
at AutoSmart...would someone please help, I was hoping to say something like
we won a lottery! Well, when we are done this project we're working on, it
will feel like we won a lottery.
So this customer calls my shop today and I ask him for his name; he gives
it to me, and then he says, "I know, it sounds like urapeein (european); I responded
well then I better come out of the bathroom...lol, lol, it was a very funny
moment, the guy on the other end of the phone was laughing very hard and so
was I. (the highlight of my day was laughing with a total stranger out loud!),
so fun!!

Repeat Day Four
Well one thing is for sure...that, we are enjoying the leftovers~
All the flavors in the Veggie Shepperds pie were even more tangable, (lol...get
it, tangable, vegetable lol) Hey, we gotta make this incredible life we're
living from day to day interesting, or at the very least humorous.
The veggies pita pizza was left to bake a little longer tonight, it was
hotter and I added a few more veggies...the flavor that tops it off is
the asiago cheese. We took a picture of the pizza, when I learn how to
download my camera, I will post it here.
Physically we are feeling better after work today, but we haven't the
zest to pick up and walk in the rain and we're a bit wii'ed out, but our
spirits are high and our motivation is strong.
Our recipe for tomorrow will be baked talapia, sweet potatoe fries baked,
and fresh broccoli and cauliflower steamed with a fresh salad. Yum Yum

Tuesday after Labor Day
Well here goes...
A typical day after a first day back to work from the long weekend...
Talk about a weather turn around brrrrr....I am not looking forward
to the cold (Larry Is!) He says its been one of the hottest summers
at the shop that he has ever experienced. So he saysp "phew"...thank
god that's over.
Sister Dar's birthday today...I cheated on some candy and my favorite
ketchup chips (I never have to share these with Larry he doesn't like them),
but, overall we stayed the course...
Vegetable Sheperds Pie for lunch...yummy...even on the second day (imagine that
and its all veggies!, but for supper, we did try the new pita veggies pizza.
That turned out to be a nice surprise, better than real crust, and lighter on
the tummy too. We're checking Larrys sugar in about an hour...he's feeling
under the weather tonight.
We reposted to our wii game and it turned out I lost .6 of a kg and larry lost 1.2 of a kg. (of course that's from posting over 115 days ago !! S0...that's why this
blog is important to us. We are loving the feeling of accountablilty and keeping
our word. yeaaaa
Hope your Tuesday after labor day was as exciting as ours....lol
Tomorrows lunch, left over shepperds pie and for supper larry would like
to try the pizza again. He said it was damned good.

Day number two!
Hello everyone
What a great day! We walked to the labor day parade, no rain, as was expected! Good parade, just needed some in between the space between the exhibits. Way too close together .
Larry and char walked to the parade, not a good weather day for biking, but we did a couple of hours of yard work instead . Looks great preparing for grape amd wine parade day!
Our recipe for vegetable shepards pie was delicious, Larry's blood sugar was too high though, and he went for a quick bike ride to get it down,
We are feeling good about our goals and plan on leftovers for tomorrow. Will keep posted if this is the right recipe for Larry. Hope all enjoyed your Labor Day Weekend xoxo

Welcome to our Life!
Hello friends, family and new aquaintenance;
Larry and Char (us), have begun a new journey today, and to inspire our motivation in the areas of our life that we want to accomplish, we decided to start up our own interconnection with everyone we know. We (Larry and Charlene), will be posting on this blog daily. Our goals set and one of them is to post our daily journal entry...sharing with others our journey.
Along the way we will be looking for your support and good wishes and otherwise maybe, some good stiff advice when we are slipping. Staying within the truth of matters is our commitment to each other and to you our supporters.
We are on the journey of reversing Larry's Diabetes and eliminating Char's high cholesterol. We are following a high density eating life style. We have over 150 recipes to share. We will keep you posted as to how they taste and the real goods ones, we will post here.
